One of my favorite breakfast foods has always been pancakes. I’m one of those people that loves pancakes, but can’t stand waffles (and yes, there is a difference!). Though I love them so much, I don’t eat them as often as I would like due to them having so many carbs and with my body type, each carb I eat goes straight to my stomach! I have finally discovered a healthier way to enjoy them, low-carb, while still being pretty delicious! The main ingredient was the Organic Coconut Flour from BetterBody Foods!
You Will Need:
Start by whisking all the wet ingredients together, including the eggs, minus the coconut oil. A Pyrex measuring cup is perfect for this as you will have already measured the almond milk in there, plus it prevents extra dirty dishes from being made (or maybe that’s just the lazy in me talking…ha!).
Continue my mixing all your dry ingredients in a large bowl. Then prepare your skillet with the coconut oil on medium heat. Keep an eye out on it so it doesn’t overheat!
While your cast iron skillet is heating, whisk in the wet ingredient mixture into the large bowl with the dry ingredients. Blend well and spoon the pancakes into the heated skillet, as you would a traditional pancake! Keep in mind that the consistency will not be the same as if you were using traditional flour. It will be stiffer than normal, but smooth! You can take the edge of the spoon to make your pancakes more rounder after adding them into the skillet.
Cook on each side for a few minutes, this will vary based on your stove, but all you have to do is periodically check every couple of minutes to peek at the underside and check on their progress! Plate, garnish with all the other ingredients left, and you’re good to go!
Keep in mind that these can certainly be keto friendly. Just limit the amount of berries you use and replace the sugar with erythritol. The agave is also optional. You can blend these into pretty much any diet with your creativity and taste buds. Enjoy! 😊

Simply put, anything coconut, is simply AMAZING! I usually use shredded coconut as a garnish on pancakes and waffles just for that added flavor, but I had not heard of coconut flour before. I am eager to try this recipe, thanks for sharing.
These coconut pancakes sound delicious! I am an all around breakfast girl! I love waffles, pancakes and french toast! I’ll definitely have to try to make allof the above with this Organic Coconut Flour! Love a low cal option.
