By now, y’all should know about the love I have for Southern cooking. Actually becoming a vegetarian has made me love it even more! It helps me be creative in recreating dishes that I loved growing up. I am also a new homeowner, along with my husband Keshaun. Though we have a ton of kitchen cabinet space at the moment, we don’t anything taking up unnecessary space in them. When I was given the opportunity to promote the Calphalon Premier™ Space Saving Hard Anodized Nonstick 10-Piece Cookware Set, I was excited. It not only gave me the chance to share a new recipe, but I was also able to save a ton of space in our cabinets by stacking these pots and lids easily!
I have always loved the Calphalon brand. I have a knife set from them that is my holy grail; nothing like it! The Calphalon Premier™ Space Saving Hard Anodized Nonstick Cookware helps save about 30% more space. Another thing I love is how you can stack them in any way you’d like, meaning there’s no need to remember which pot stacks inside of which other. This cookware is made up of various 8″ and 10″ diameters and are durable. They are also built of a hard anodized construction allows. This helps to distribute heat evenly around the entire diameter of the pot! When you’re done cooking, they have the ability to be tossed in the dishwasher for quick cleanup! 😊
I am also a huge fan of these lids! They fit securely around the rim of the pot, which helps prevent leaking around the edges from boiling water!
Now on to my quick and easy Vegan Southern Stewed Okra recipe. Feel free to add sausage, andouille, and bacon if you’d like!
You Will Need:
Feel free to add chopped onions, white or yellow will do. Ignore the can of corn I used. I didn’t use it, but you can feel free to if you’d like!
Start by adding a tablespoon or 2 of coconut oil, depending on how much okra you’re cooking. You can almost add later if it’s not enough!
Next, toss in some garlic and chopped green onions. This is the step you could also add some white and yellow chopped onions. I was on a tight budget for this meal, so I used what I had available in my fridge and pantry.
While your herbs are sautéing, you can start cooking your quinoa. I made a cup, but feel free to make more!
Add in your okra and cook until almost tender and very little slime left. At this point, add in both cans of tomatoes and stir. Keep an eye on your dish at this step, as you may need more liquid (vegetable broth) to thin out your mixture a bit. Don’t add too much! Add little by little.
Once almost done, reduce heat to low-medium, add your batch of dried seasonings to taste and stir. Don’t over salt! If anything, add in extra powdered herbs and if it still doesn’t suffice, then add a little bit of salt at a time. It will take a little extra for a larger batch of okra!

Damn girl!! That looks AMAZING. When I lived in North Carolina I learned what okra was, and it is such a staple in Southern cuisine. I like pickled okra, but would love to try it in a stew!
