I tend to be the biggest rebel when it comes to food. Though I am a vegetarian, I still like to bend the rules a little (e.g. BBQ’ing my Beyond Meat burgers to make them taste exactly like BBQ burgers). Since I am also keto from time to time, you can imagine I also like to bend the rules. As long as I’m not going back to eating meat, I still like to have fun with my food. I knew cheese grits was one of my favorite breakfast meals, so I knew once I started doing this keto thing, I had to make it work somehow. That’s how my Keto Friendly Cheese Grits recipe ended up being born. As a base for everything in the pot, I used the BetterBody Foods Liquid Coconut Oil!
You Will Need:
Start by heating a bit of BetterBody Foods Liquid Coconut MCT Oil over medium heat until very warmed. Make sure not to heat too much, as coconut oil burns easily. Immediately add the entire package of riced cauliflower and cook almost all the way through.
Once you get to that point, add your cream cheese, followed by some sea salt. Don’t be too generous with the salt, as you’re going to garnish with black lava salt later and you don’t want your grits overpowered with sodium. You can also taste as you go. If it tastes like there’s almost enough salt, feel free to stop adding more. Stir to blend.
Sprinkle in some smoked paprika. This will help curb the cauliflower taste, making them taste closer to actual grits. The smoked gouda cheese you’ll shred in the next step is another step that will aid in removing the strong cauliflower taste. You do not want to substitute this cheese for another type. It’s a stronger cheese, and that’s exactly what we’re going for here to add some flavor! Reduce your heat from medium to in between low and medium before proceeding to the next step.
Stir to blend once more, making sure the cream cheese is melted all the way through and remove from heat. If you’ve done this properly, your grits should be creamy rather than crumbly, as the texture of riced cauliflower is.
Add your desired amount of butter. My preference is vegan butter, as I feel a bit more comfortable with using more of this than real butter. Though lots of butter and cheese are allowed on the keto diet, we still have our arteries and other organs to be concerned with. So try not to go too crazy!
I like to sprinkle a bit of Mexican cheese on top to finish off the dish. This not only adds more flavor, but it adds in a bit of a kick to the grits. Continue by garnishing with black lava salt. If you added in a lot of sea salt earlier, be very careful with this, as this salt is a lot stronger and potent than the average.
Garnish with a bit more of smoked paprika. This is totally optional; I just wanted more color! 😆 Enjoy!
