As some or most of you may know, I have kind of a crazy obsession to avocados…okay, okay. Maybe it’s a bit more overboard than I’d like to admit, but listen. I can eat one for every meal daily and be quite the happy camper! I may just call June my favorite month from now on. Why?! Because it’s National Avocado Month! Who knew such an awesome thing existed??? Well it does and I’m choosing to celebrate it making a classic favorite of mine, Loaded Avocado Toast using a couple of my favorite BetterBody Foods products!
You Will Need:
Now keep in mind, I like my avocado toast loaded; I don’t like it boring. That being said, if you don’t like any of the ingredients, feel free to leave them off. I am just a Louisiana girl at heart and crave flavor! If you’re not vegan though, please don’t cut any of the steps. Your taste buds will not be disappointed!
Before starting on your avocado toast, it is best to get a skillet hot with about a teaspoon of BetterBody Foods Avocado Oil, give or take. This is going to be contingent on whether or not you like softer or harder eggs. Since I prefer mine soft, I use a bit more oil. If this is also the case for you, don’t let your skillet get too hot and move quickly with the next few steps.
Since I’m not much of a bread eater, I do prefer to use one that is loaded with nutrients, rather than one that is just regular bread with no nutritional value. Dave’s Bread is one of my faves and works so well with avocado toast!
Some of y’all may be side eyeing me right now, but of course I’m unbothered, haha. What can I say?! I love my mayonnaise! I am that person that hates for any corner of her bread not to have any mayo. If there’s nothing on there, I usually break it off and throw it away. I cannot stand dry bread. As a result, I took used a healthy serving of BetterBody Foods 100% Pure Avocado Oil Mayo with Lime, making sure all my bread corners and sides were covered. One thing to note is that it not only has avocado oil, but it’s also made with cage free eggs, is non-GMO and is soy and canola free! I did; however, use the thinnest layer possible for just the right amount of lime! 😁
Don’t blame me for also going crazy on the basil here. I actually like to taste my basil and it is such a nice pop of yum on the toast, especially with all the ingredients I use on mine!
My photographer actually judged me a little for not using fresh jalapeños haha. So if you really want that added kick, use those! I like pickled ones for this because it gives me that nice vinegar flavor I like, without actually putting vinegar on my toast. I’m quite sure you could anyway though!
By the time you’ve done all these steps, your skillet should just be hot enough to fry your eggs, to your liking. For softer eggs, you’ll only need to flip them a few times and take them out right afterwards. I can do a separate post on how I cook my eggs for anyone who is interested; just let me know!
Now for my favorite part, the AVOCADO! I like to eat an entire one, but feel free to use half and save the rest for later. Slice it into small slices and place on top of your eggs!
I like to garnish mine with pepper the slightest sprinkling of sea salt. This is because the lemon juice I’m using at the end to top it all off will also add a bit of sodium and you don’t want it to be too overpowering.
I like to pre-slice my radishes for the week and soak them in a bowl of water and place them in the refrigerator. This helps prevent them from drying out so they taste fresh and delicious all week long! Slice them as thinly as you’d like! ☺️
So I finally invested in a pair of kitchen shears…so much better than slicing, by the way. Why did I not do this sooner?! 😩 I take about 2 stalks of chives and slice them up over both, so you’d probably only need 1 for 1 toast (depending on how much you like chives 😉). Finish by dropping a capful of lemon juice on each toast and you’re ready to eat!
Of course the last step is to enjoy! I ended up giving my photographer, Stephanie, the other one I made in this post. Having not ever had avocado toast a day in her life, she loved it. I think I’ve brought her over to the avocado side! 😂
