It’s no secret that BetterBody Foods is my latest secret in the kitchen. They literally almost have everything I need to cook with and even more than that, they have stuff that’s actually nutritional and good for you. What’s there for a vegetarian girl not to like?! Today with a couple of their products, I am making my own rendition of a Mexican Inspired Succotash dish. This is in no way an actual Mexican dish, but instead, a dish using just a few of my favorite flavors!
You Will Need:
I started off using a tablespoon of BetterBody Foods Avocado Oil on medium heat in a pot. This will be used to sauté my onions, garlic and mixed peppers in the next few steps. Just brown each of the ingredients mentioned, one by one until browned to your liking.
Next, I’m adding in 1 can of organic fire roasted diced tomatoes. Feel free to use the regular ones if you can’t take the heat, but believe me, even if you use the spicy ones, you can definitely dial it down a notch with the vegetable broth you’ll add in later.
I added in 2 cups of BetterBody Foods Organic Quinoa uncooked. Now make sure to wash yours before adding it in; I actually washed my entire container at once so I never had to do it again.
Remember, your quinoa is uncooked at this point, so you’ll want to add just as much liquid per unit of quinoa as needed. I used 3 cups to begin with and as I started noticing my quinoa getting a bit dry, I added more broth. As a result, you’ll want to keep a close eye on your pot to determine just how much moisture you need.
Add in enough chili powder to taste. In my case and household, more is more, haha! 😆 Follow with sea salt black pepper immediately afterwards, also to taste!
Wash your desired amount of cilantro and set aside. If you happen to think cilantro tastes like soap, skip! 😝
Sauté some spinach in just the smallest bit of BetterBody Foods Avocado Oil. This should take literally seconds. Add into your pot of succotash afterwards!
Add in your cilantro, any amount you’d like. In my case, more is also better (until I honestly added a bit too much more at the end 😨). Of course as Chef Ramsay said, taste testing is a must!
After you’ve seasoned your dish to your liking, plate and enjoy again. Add in more fresh cilantro if you’d like as well!
Remember with succotash, you control how much liquid you want. In the case of this particular post, more vegetable broth = more of a soupy consistency. I went with a happy medium here and kept it moist, yet not too much. Either way, be sure to check out BetterBody Foods products here to make your own personalized succotash and more!
