Now – you all know that The Beauty Beau loves to eat! I get it honest from my Louisiana roots. I have always been so fascinated with food, and I absolutely love cooking. For my family, coming together for a good meal is so ritualistic and natural. All of our family gatherings are sure to be centered around delicious appetizers and tantalizing entrees. Some healthy and some, well, not so much.
A few years ago I made the switch to vegetarianism and I absolutely love it! I feel better, have reached my fitness goals, and am just generally healthier. I am very particular about the quality of foods I put into my body. Whole foods with readable ingredients and delicious flavor are the only way they’re making it onto my plate.
But let me say this – I will not compromise on flavor! One of my favorite ways to enhance any dish with the bold flavor I love is with De La Viuda hot sauce! Trust me, you will clean your pantry of any other spices and sauces once you get your hands on the blossoming, fresh flavors of De La Viuda.
Now for the good part. Let me show you how to make my Spicy Vegan Eggplant Stuffed Bell Peppers that pair perfectly with De La Viuda.
First, preheat your oven to 400 degrees Fahrenheit. Poke several holes into your washed eggplant with a fork. The more holes the better! If you don’t, the eggplant could burst from the pressure while cooking. Roast the eggplant in the preheated oven for 30 minutes, then peel and set aside.
Pour the liquid from canned tomatoes into a baking dish, preferably a pot. Slice half of the canned tomatoes and place at the bottom of the pot.
Chop the cooled eggplants and combine them with the remaining tomatoes, garbanzo beans, onions, garlic, cumin, paprika, coriander, salt, onion powder, garlic powder, and pepper to taste. Add in a dash of De La Viuda hot sauce of your choice for extra spice. Combine all ingredients and set aside.
Cut off the tops of the bell peppers and stuff with the tomato mixture. Place tops back onto peppers and bake for 45 minutes.
Voila! An easy, healthy, quick, and absolutely delectable meal! I could probably eat these at least once a week.
