I have always loved stuffed bell peppers, whether there was meat in them or not. Since becoming a pescatarian, I have been experimenting so much more with different flavors and I have been truly enjoying doing so. One thing I have always loved is cilantro lime rice. So I thought, with all my other rice dishes, I sub for quinoa, why not try this also? I didn’t stop there either; I have decided to use it as a stuffing for bell peppers, using BetterBody Foods Organic Quinoa!
Prepare a pot of quinoa, according to the instructions. Add in cilantro, lime juice, Rotel tomatoes and dry seasonings to taste. Set aside. Prepare a large pot of boiling water while removing the tops and membranes from your bell peppers. Once water arrives to a boil, add in bell peppers. Cook until soft, usually around 10-15 minutes. Prepare an avocado oil lined aluminum pan, while preheating your oven to 375 degrees. Stuff bell peppers with cilantro lime quinoa. Once preheated, bake stuffed peppers for about 7 minutes, then switch the oven to broil for 4 minutes flat. Remove peppers from oven, let cool and enjoy! 😘

This looks super healthy and delish. I’m not a fan of bell peppers in general but I might give it a try…have to take out the cilantros, they are my kryptonite 😀
