I have to admit, some of the recipes I put together the very first time turn out to be epic fails and not to toot my own horn, but that is very rarely. On this occasion, I did happen to mess up on what I was trying to do. My vision was to create a vegan version of pumpkin bread, but the moment I cut into it, it was more of a crumble, which fortunately worked out very well! 😂 So ladies and gents, check out my recipe for my take on a Vegan Pumpkin Bread Crumble using a few products from BetterBody Foods!
You Will Need:
While your oven is preheating to 350 degrees, start by greasing a loaf pan with PAM Olive Oil spray. You can definitely use any type of oil and manually run your fingers around the entire surface with it, including the BetterBody Foods Coconut Oil.
You can continue by mixing all other ingredients together that are listed, one by one, and stir to combine.
In the process of mixing, you may find you need to add more coconut flour. The consistency we’re going for is creamy, yet not watery. If the texture is too watery, that’s how you know you need more flour. Add in a little at a time to achieve the perfect consistency!
Once you have your mixture done, bake for 40 minutes and you’re ready to enjoy!
I always like to add a bit of extra cinnamon at the end if it isn’t flavored to my liking. Clearly this girl likes seasoning over here, which should come as no surprise if you’re not new here! 🤪
Next time I may actually succeed in making an actual pumpkin bread, but I’ll let the crumble do for now, haha!
