You Will Need:
INSTRUCTIONS:
Start by adding a little of BetterBody Foods Avocado Oil to a skillet on medium heat. This is what you use to cook your onions and mixed bell peppers, once heated. Feel free to add as many as you wish! For me, more is better and adds more flavor! 😊
Allow your peppers to brown a bit before proceeding to the next step.
Add in 1 package of Beyond Meat Beef-Free Feisty Crumbles, frozen. You may realize that you need more avocado oil so at this time, feel free to add in extra to allow your “meat” to brown properly!
Once your crumbles have thawed and cooked through, add in 1 package of southwest taco simmer sauce, following with a gradual amount of organic vegetable broth and stir. The consistency you want is below, covering the mixture, yet not too liquidy.
Add in 1 can of chopped green chiles and stir once more. Taste to assess flavors and add in dry spices and peppers as desired! It’s totally fine if you overdo it since you’ll be adding in cooked quinoa to spread the flavor even more throughout.
Once you get the flavor to your liking, add in a few spoonfuls of cooked BetterBody Foods Organic Quinoa. This will give you that extra boost of protein and overall satisfaction!
Begin by plating your nachos. I’ll admit, mine is more of a salad with the crushed chips, but you get the picture! 😅 Start with the chips, then the meat-free mixture, pico de gallo, shredded cheese, Pancho’s Cheese Dip (melted), cilantro and more jalapeños. Enjoy!

I love weaving vegetarian meals into my weekly meal plan. It’s so nice to keep cholesterol out of my family’s food as much as possible! This looks so yummy and my kids would love it. I’ll have to try it. Thanks for the recipe!!
