You Will Need:
Start by cooking your quinoa according to the instructions, as much as you’d like. Typically the rule of thumb I follow is 2 cups of water to 1 cup of quinoa. Cook as much as you’d like, based on the number of tacos you plan to make. If you make too much, you can also repurpose the cooked quinoa for another dish! 😃
Continue by getting your cast iron skillet hot with some BetterBody Foods Coconut Oil. Once hot, sauté onions and bell peppers until browned. Upon this step, combine with cooked quinoa and blend well. Reduce to low-medium heat.
Add in your fire roasted tomatoes, taco seasoning, vegetable broth, and stir, tasting as you go. Depending on the amount of quinoa you used for this, 1 pack of taco seasoning may be sufficient. If not, feel free to add more. The beauty of this is that it isn’t uncooked meat, so tasting from start to finish is totally okay! Try not to get too crazy with the taco seasoning in this step though, as you still have seasonings to add after this step. Feel free to add more at the end if necessary!
While this is simmering, prepare your cilantro and chop your green onions. For these in my house, more is better! 😆 I also sliced my lime and juiced it for later.
Add in your garlic, and remainder of seasonings to taste. Once the spice is to your liking, remove from heat and plate!
I dress my tacos with spring mix lettuce, followed by the taco stuffing, salsa, pico de gallo, cotija cheese, green onions, cilantro and lime juice. I know that sounds like a lot, but I have never been a fan of boring food. With this, the more toppings, the more flavorful and you can always add and take away as you’d like.
