If there’s one thing that I love as a vegetarian, it’s stuffed bell peppers. Now one may thing others may argue is how boring they could possibly get, especially considering them not ever having any meat in the mixture. I beg to differ. Like pretty much anything else, there’s plenty of room to experiment, and that’s exactly what I did here with my Vegetarian Stuffed Peppers with Thai Chili Cream, featuring some of my go-to items from BetterBody Foods!
You Will Need:
Jalapeño Cream Sauce:
You want to start by heating a bit of BetterBody Foods Liquid Coconut MCT Oil over medium heat. Don’t heat too long, as this oil heats pretty quickly. While this is heating, you can quickly slice your bell peppers and remove the membranes if you move fast. By the time this is done, it will be time to add in your red and white onions to your frying pan, where you can reduce heat to low/medium. Brown lightly and add in minced garlic.
Once all of these are browned, you can add in your cream cheese, stir, and add in a small hint of sea salt to start. This amount can be adjusted later, as long as you don’t start out with too much, so no worries here. Stir to blend
This part is totally optional, but as y’all know, I love spice haha! I sliced up a few Thai chilies to add to the mix, but feel free to use jalapeños for a more subtle spice. If you can take the heat though, I highly recommend the chilies though!
Now you want to add everything you into a food processor, starting with the lime juice, then all the ingredients you just prepared in the frying pan. Add in a handful of cilantro. Blend until smooth and taste to adjust with salt as needed!
I’m now going to juice 1 more lime for the stuffing that I’ll be mixing with my cooked quinoa in the next few steps.
Blend the lime juice with your Thai chili cream sauce. Add in a few spoonfuls of quinoa to your liking. Keep in mind, the more you add, the drier your stuffing will be, but you can always add more sauce later! This in mind, only use half of your sauce at this point, saving the rest for later. Blend ingredients well until mixed.
Continue by spooning your mixture into each pepper half, leaving a bit of room at the top for sauce. Sprinkle in some chili pepper flavored sea salt across the top of each pepper. Since this salt is more coarse, you only need the smallest amount. This is something I found at HomeGoods, but regular sea salt will do just fine! For a little more kick, sprinkle some organic chili peppers on the top! At this point, you can spoon additional cream sauce on the top of the peppers if you’d like! Add a few tablespoons of water to the bottom of the pan (so your peppers won’t dry out). Cover with aluminum foil and bake for about 30 minutes, or until browned and done.
Once done, garnish with cilantro and enjoy!
